Why closed on Saturdays? Because this is a restaurant run by a family of Greek Orthodox origin. It's important to note this because when you're in the U.S., you'll see just how much "being American" means coming from all over the world. The Cleburne Cafeteria is typically "American" in the style of a canteen-restaurant where you stand in line and they serve you what you want on a platter.
