Opened in 2015 by chef Collin Cormier, Pop's offers a creative, hearty interpretation of Louisiana's most famous sandwich, the aptly named po-boy, available in a dozen versions. For example, the Boudreaux with fried catfish, pickled okra tartar sauce and blue cheese coleslaw, or the Delcambre Dandy with crispy Gulf shrimp, arugula, tomato, lemon and caper sauce. Salads and side dishes include home fries, mac & cheese and fried marinated okra.
