Opened in the spring of 2015 by chef Collin Cormier, Pop's offers a creative and hearty interpretation of Louisiana's most famous sandwich, the aptly named po-boy, available in a dozen versions. For example, the Fried Catfish Boudreaux with pickled okra tartar sauce and blue cheese coleslaw, or the Delcambre Dandy with crispy Gulf shrimp, arugula, tomatoes and lemon caper sauce. Salads and sides too, including home fries, mac & cheese and marinated fried okra.
