On 70 ha in Kochersberg northwest of Strasbourg, the Nonnenmacher family grows asparagus, sugar beet, barley, corn and raises ducks. It is a member of the association of foie gras producers in Alsace (Gänzeliesel) and therefore meets precise specifications: the ducks arrive here at the age of one day and are fed on cereals produced on site for thirteen weeks. Then, the feeding is done twice a day, for twelve days. Slaughtering and processing are then carried out in the farm's laboratory and the products are made from traditional recipes. Among the flagship products are raw foie gras, tunnel foie gras (under golden tin paper: 133 €/kg), semi-preserved Le Parfait, canned foie gras and lobes of foie poached with Guérande salt and black pepper (98 €/kg).

Located in Woellenheim, Le Gaveur du Kochersberg is a family farm specialized in duck breeding. It extends over 70 hectares, more than half of which is devoted to the cultivation of cereals (corn, wheat and barley) which are used to feed the ducks. The ducks are of the mulard breed, a sterile hybrid resulting from a cross between a Barbary duck and a Peking duck. Le Gaveur du Kochersberg provides fresh, authentic and 100% "made in Kochersberg" products that are entirely artisanal. These include a wide range of pâtés, processed products such as vegetable pies and quiches, sausages, stuffed sausages, but also products from Alsatian traditions such as Fleischschnaka, meat rolls and leftover pot-au-feu, presskopf, the Alsatian head cheese, and baeckoeffe, a traditional dish made of potatoes, vegetables and meats

Le foie gras cru ne pouvait plus se commander ni se réserver. Ayant appelé dans la matinée, on m'a certifié que j'en aurai si je passais avant la fermeture... Pour ne pas arriver trop tard, je suis partie plus tôt du travail et fais les kilomètres additionnels pour arriver au magasin à Willgotheim vers 18h. Et là, il n'y en avait plus!
Quand on fait une promesse à un client on fait en sorte de la respecter... Dans le cas contraire on le perd.
Je n'y remettrai pas les pieds.
