Jean-Paul Schmitt raises ducks, geese and black hens from Alsace. He has made a speciality of everything to do with poultry and palmipeds and cooks them in various forms: fine poultry charcuterie, cassoulet and duck sauerkraut, rillettes... and the inevitable foie gras! Jean-Paul Schmitt also sells a few specialities such as liver mousse or Excellent, an improved country pâté that combines poultry liver, duck foie gras, poultry and pork meat for a result that is... excellent!
