Dorjee Ringchen was a Buddhist monk for 10 years. Locked up in prison then exiled in India for 9 years, he then came to France. The momos are a kind of ravioli that has been cooked in Tibet for a very long time, with barley and wheat flour. We put meat or vegetables in it and steam them. It's his specialty and he prepares them himself. Here he wishes to present Tibet with new dishes prepared every day, based on barley and wheat flours, steamed dishes, fried noodles...
