French, polished and a little pop: three assets of a kitchen that attracted a large expatriate clientele. The chef Paul Pairet's cuisine is fine and inventive. Don't you need to come to Shanghai to taste a veal? Admittedly, but a very good table at that price is still rare in the Hexagon, not?
