This family-run patisserie sells Kalymnos specialties, including a galaktoboureko that has made the place famous for decades. Admittedly, this "milk cake" made with phyllo pastry sheets and custard is not exclusive to the culinary traditions of Kalymnos, but the Kalymniotes have their own traditional recipe. This is the place to try it. It is often accompanied by a scoop of ice cream and drizzled with syrup or honey. You can also try the excellent baklava prepared on site.
