Traditional workshop for making halva, the sweet delicacy enjoyed in Greece. Opened in 1924 by a Greek refugee from Asia Minor, the halva workshop is still considered one of the best in Athens. The recipe is simple and well known: tahini, sugar, and water. But its secret lies in its very special technique which consists in creating caramelized threads that will resist the broth... A halva without thread is an industrial halva!
