Chef Xavier Beaudiment is constantly on the lookout for ways to create "plant walks" with seasonal produce. Each dish is a surprise in the mouth. Having learned from botanist Guy Lalière, he has mastered the use of edible plants, herbs and flowers. The restaurant is renowned for its originality, creativity and warm welcome. The establishment boasts top-of-the-range Relais & Châteaux rooms. It is the only 2-star restaurant in the Puy-de-Dôme region.
