The most traditional tapiocas of Olinda are sold in the Praça da Sé, near the church of the same name. They are part of the folklore of the place. The tapioqueiras, the ladies who prepare the traditional cassava cakes, start arriving in the middle of the afternoon and will not leave until late evening. The place has been recently fitted out by the prefecture and the traders are now better installed. The square is located at the top of the Misericordia hill and offers a superb view of the sea.
