On the roof of the beautiful Hostal Auténtica Pérgola, in a charming colonial setting, you'll find this elegant paladar. Although they use the same ingredients as everywhere else, the recipes on offer here have something extra: spicier, spicier, with the use of slow cooking and more tropical flavors. The use of the barbecue must have a lot to do with it. The meats are carefully selected, and you'll see it in the dishes, from chicken (curry) to lamb and pork. A good address in Santa Clara!
