Opening hours in Israel are quite similar to those in France (between 9am and 7pm). Note however that sites and museums generally close earlier on Fridays (around 2pm-3pm) and are sometimes completely closed on Saturdays for Shabbat.
Enjoying yourself à TEL AVIV
In Tel Aviv, most restaurants are open from late morning until evening. They usually offer continuous service until the kitchen closes, which varies from one restaurant to another (never before 11pm). Unlike Jerusalem and other Israeli cities where most restaurants close for the Sabbath, from Friday afternoon to Saturday night, you will have no trouble eating in Tel Aviv. Many cafes and restaurants stay open and it's even the busiest night of the week when all the young people get together to party.

For the most part, cafes and bars that are open in the early evening operate continuously until closing at night, often when the last customer leaves.

Most shops are open Sunday to Thursday from 10am to 7pm and close on Fridays around 2pm. Some shopping areas such as the port (Namal) are open on Saturdays, as are some shops in Jaffa.
Get out à TEL AVIV
Forget the European, or rather French, rhythm. In Tel Aviv, we don't eat dinner before 22h-23h and it's useless to show you before 1 or 2 hours in a club at the risk of having to tell the barman who will take you for a rookie anyway. Most clubs are open until about 4/6am.
