Founded in 1956, the Saint-Bonnet-de-Salers dairy cooperative has deep roots in the region. So much so that in 2000, after only a few years of marriage, the cooperative's producer-members opted to regain their independence from a regional dairy group. Here, we stand up for raw-milk Cantal and for Cantal made exclusively from Salers cow's milk. To these values we add quality, the fruit of a long process of production and, above all, maturing of each cheese.
