Here's a healthier alternative to bokit, with no frying and no fat. Banton is the brainchild of chef Charles Valétudie. It's a pizza dough topped with spices like turmeric, baked in the oven and garnished with ground beef, chicken, bacon, tuna or ham and cheese. Hungry eaters can opt for the full filling, as with bokits. The sandwich's name is a nod to the old-timers who used to call their bread "banton". Charles and his wife Sabrina warmly welcome you to their sheltered, green terrace.
