If you know the vineyard of the region, you probably know less well one of the many other riches of the:: snails! Here, we are raising high quality snails, large grey in particular, fattened for 150 days around, which become delicious dishes: shell with garlic butter, laminated and jars for homemade preparations. You can also enjoy caviar… snails, eggs of extreme white. The Chautagnard Snail is part of the Academy of Tastes and Culinary Traditions of Savoy which defends the Savoyard culinary heritage.
