Callas is closely linked to the olive growing activity. In the 19th century, the village had a total of more than twenty oil mills and 56,000 olive trees, mainly of a local variety: the ribier. One of its former mills was restored in 2008 by the Dracenoise Urban Community. Built in the 18th century, it became a municipal building in 1932. If it ceased its activity in 1956, housing all its equipment, left as it was (bucket wheel, presses installed in their hewn stone chapels, wooden gears, stone wheel, boiler and hell...) everything today allows visitors to understand the processes that used to produce the precious liquid. The visit of the mill alone is free of charge but is by reservation only.
