The snail, here called "luma" is a real local gastronomic speciality. Less well known than its Burgundian counterpart, it is nonetheless an unavoidable speciality of the Bocage Vendéen. Gabrielle Moreau raises and cooks them. They are offered fresh and ready to bake (in shells, mini-bouchées, cabbage...) for the aperitif or as a starter, in jars of flesh or cooked. You can also take a tour of the farm with a commentary by the heliciculturist - a bit of culture doesn't hurt! -, then aperitif with snail tasting.
