It was the Marquise de Sablé who, for the first time in the 18th century, presented to the court of the Sun King the famous pure butter Sablé biscuits which today belong to the French culinary heritage. This strong traditional anchoring goes hand in hand with the evolution of practices. Indeed, since the early 1990s, La Sablésienne has been a pioneer in the manufacture of organic biscuits. Recipes rich in forgotten ingredients (spelt and quinoa) are also elaborated for the pleasure of young and old alike.
