LES CAUDALİES ST HERBLAIN
Private restaurant for meetings and other business meals in Saint-Herblain.
How about measuring time and pleasure in caudalies? The caudalie is the unit of measurement used to calculate the aromatic persistence of wine on the palate. It corresponds to one second. If the name inspired Anne-Françoise and Benoît Arbouin when they opened their establishment, which gives a bit of cachet and color to the very commercial route de Vannes, it's of course because wine has pride of place here, with over 300 references on the menu and as many expert and passionate tips. What's more, the sommeliers can suggest a selection of five 10cl glasses to match your dishes. The menu (which varies according to the season) features fresh produce cooked with imagination and talent. Gourmets and connoisseurs of the vineyards, let yourself be tempted, for example, by squid and langoustines, vegetable broth and celery, or semi-cooked duck foie gras, fig sorbet and Phu quoc pepper; before continuing with a supreme of free-range poultry, prawns and wild mushrooms, or a filet of duckling roasted with figs. Then, after perhaps sampling Beillevaire's renowned cheeses, don't hesitate to opt for the fig and almond tartlet with ice cream, or succumb to the pleasure of the hazelnut and caramel chocolate sphere. And if you'd like to take some of these delights home with you, the chef also offers tapas, hot dishes, foie gras and takeaway reductions. The restaurant can be privatized for meetings and other business meals. An excellent address.
Je vais m'y retourner régulièrement je pense.
