Local ingredients, surprises, a symphony of flavors in 4, 6 or 8 beats: this is the alchemy proposed by the young chef Mathieu Pérou, perpetuating the family tradition while bringing his own revolution. No fixed menus, just inspiration for each service, brought by the ingredients of the day coming straight from the Erdre, the river that faces the Manoir de la Régate. The sometimes forgotten fishes are here revisited and sublimated like this carp, bream, perch, metamorphosed. The vegetables come from a nearby garden. The chef and his brigade bring out the flavors of the season. The bread made exclusively for the starred chef brings back to life a wheat dating back to 1830 and which in 2022 amazes our palate with this 100% natural leaven baker bread. The team's touch transcends all these good local products in dishes with unforgettable presentations and tastes. Anne-Charlotte, Mathieu's sister, is at the service with a smiling team or sommelier, and depending on the dish, the team members proudly come to you with their creations and provide warm and wise advice. " étrange ", je ne me suis pas toujours sentie à l'aise, le personnel semblait malheureux ... en tout cas c'est comme ça que je l'ai ressenti, rarement un sourire, très évitant, peut-être juste stressé... mais ça fait pas très chaleureux et si j'en parle c'est parce que ça joue sur l'expérience du client.
