Restaurant offering organic cuisine with local products, prepared by the chef Mathieu Francès, in Nantes.
Welcome to this beautiful address Cantine de Jamin located in the street of the same name... In the kitchen: Chef Mathieu Francès, who cut short his career as an engineer in the construction industry to throw himself fully into his passion. His training in various gastronomic restaurants, including the elegant Imagine where he assisted the Chef Anne-Lise Genouel, gave him a taste for work well done. His ambition is to offer a home-made, organic cuisine from raw and local products. To do this, he buys from the Talensac market, Mr. Delanoë's poultry, Thierry Corbineau's fishmonger's, and vegetables from Guillaume Bouyer's farm. The beautiful artisanal softs sparkling grape juice, or apple juice from Vertou and the spirits (whisky from the Pointe du Raz...) The food, condiments and other spices come from the grocery store Ô Bocal. He is assisted in the dining room by Laure who comes from Chez Louisette. Dressed in English green, the cozy place of 25 seats invites to conviviality. The result is a cuisine based on contrasts, contrasts of flavors but also of textures, as for example with the sweet/acid and the soft/crunchy of this beef tartar with lemon, tabbouleh with herbs, spicy fermented cabbage and white sauce, and then with this long pepper white cheese with honey syrup and cinnamon crumble, where the creaminess and the spiciness, the aquosity and the sweetness, the crunchy and the softness, are subtly mixed together A nice surprise to discover! Bingo celui là est top. Petit, ambiance cosy et presque feutrée. La carte est courte (au choix, 2 entrees 2 plats 2 desserts) mais tout fait envi !
La serveuse est de bon conseil et connaît très bien ses vins (qu'elle sélectionne elle même en amont en rencontrant les commerçants locaux). La cuisine est Juste. Le tartare de bœuf super fondant et le merlan nacré divin. Merci chef!
