Open on the banks of the Tarn, this space is the major asset of the restaurant - lounge bar. Lorsqu'il n'existe de choix à la carte en dehors des menus je crains toujours de ne trouver aucun plat qui me convienne. Mais ici j'ai eu l'opportunité de pouvoir choisir des plats au menu à mon goût (j'ai horreur de la chair crue et du sucré-salé des cuisines européennes). Je trouve les plats que j'ai choisis excellents, originaux et bien pensés.

Le service est bien organisé dans son ensemble bien que l'on note toutefois des éléments perfectibles quant à la gestion des grandes tablées.

Les limites de la compatibilité d'une ambiance fortement animée par moments avec la dégustation de mets raffinés peuvent s'avèrer assez problèmatiques pour une partie de la clientèle éduquée aux principes du kaiseki et de l'umami...
