Nicolas Hrgovic raises, transforms and sells his snails. The sale is done at the farm and you can even visit the farm by appointment. From the end of April, nearly 175,000 small snails aged around 20 days are installed in the parks. They are first fed on radish, fodder cabbage and mustard greens, then a GMO-free food supplement for gastropods is added. After about 4 months, they reach maturity and are placed in fasting crates for at least 15 days before consumption.
