It is in the charming village of Oô, a few kilometers from Bagnères-de-Luchon that you will have the opportunity to taste a local specialty that can also be found on the markets of the area: the spit cake! This traditional sweet from the high valleys of the Pyrenees is a surprising dessert that is cooked in a singular way: the liquid paste is poured around a cone placed over the flames of a wood fire. The expert of the ovens here is Francette Rives. She prepares three sizes of these cakes that look like a vanilla flavored fir tree.
