Charlotte and Gilles Authesserre raise snails in a spirit of quality and authenticity that has made their reputation. It is thus here about gastropods but also about gastronomy! Their snails which grow in the open air in the countryside are characterized by a fine and tasty flesh. In a second stage, the snails are transformed according to artisanal processes. La Ferme d'En Loune offers canned snails "petits gris" in shell or meat, packed with traditional sauces, but also frozen snails.
