Fabien Candelon and Nicolas Rico, two childhood friends, set up their organic black garlic factory in 2019. And since then, their small business does not know the crisis. It is 6 tons of garlic heads that come out of the oven each year. They supply themselves exclusively with organic garlic from producers in Lomagne. They have developed a range of products, from whole heads to peeled cloves, including black garlic paste, a mustard and a flavored honey, and even an organic beer made by Jean Brasse. These products are available directly from the lab at the farm.
