In a refined setting, he offers us a festival of flavors with, to cite just a few examples, sliced Breton lobster, snacked langoustines, frogs' legs, then sea bass cooked with peas, a superposition of potatoes with citrus fruit or veal fillet in a hazelnut crust, springtime vegetables, green asparagus and lemon like a meringue tart or chocolate in a milky ganache... You name it!
