The production basin of the Lucca de Languedoc in the Appellation of Origin controlled from northern Hérault to Carcassonne is naturally that the audois and heraldic producers met in the Lucca Defense Union of Languedoc and Languedoc olive oil. Also harvested for the manufacture of olive oil, it can be assembled with the variety Olivière and other secondary varieties to offer a range of aromatic sensations that producers also wish to protect by an Appellation of Origin.
