The commune of Paulhan is typical of the circular villages of the Middle Ages. One of the remains it houses is the hermitage Saint-Jean-de-Vareilhes. Nestled on a hill, this former chapel, then a diner in the 12th century, is one of the oldest inhabited sites in the village. The place was home to hermits before the revolution. Its name comes from the stream that runs through the commune.
