1860 BOULANGER
After a 6-year tour of France, Pierre Claparède opened this bakery in Les Halles, voted best bakery in Languedoc in 2024. The specialty: long-fermented sourdough bread made with ancient varieties of wheat (low-gluten petit épeautre), creative home-made viennoiseries, such as Rolls (croissant dough with raspberry, pistachio and other fillings) or pink praline brioches. Two originals: the six-fruit loaf and the "chocovore", a cocoa-hazelnut loaf. Savoury sandwiches include the salmon and avocado croissant. For something sweet, we recommend a delicious kouign-amann or fougasse from Aigues-Mortes.
