Hildegarde Horat produces organically grown Pays d'Oc wines in Assignan, surrounded by vines and an ancient Roman road. Over the years, the estate's eight hectares have been replanted and restructured with care and attention to detail, making room for a wide variety of grape varieties. The estate is well worth a visit: in addition to the winery, the buildings are of ancient origin, probably belonging to the Knights of Malta. A gîte overlooking the vineyards and a swimming pool provide the perfect setting for a relaxing stay.
