You will be able to buy home-made smoked trout and trout fillets from this farm, which is built on a floating platform that supports 12-metre deep ponds. Fed only with fishmeal, the trout are raised in "semi-freedom" which guarantees a final product that is close to wild fish. Régis Fabre has set up a traditional smoking workshop with hand preparation, salting without any preservatives and cold smoking.
