Chef Ludovic Brillant, originally from Sérignan, returns to the Aude region with 20 years' experience in the kitchens of Parisian and international restaurants. Ludovic's cuisine is seasonal, based on fresh, local produce whenever possible, and features "the true tradition of rediscovered cuisine". We recommend the Passe-Temps salad as a starter, the unmissable boeuf bourguignon with the flavours of yesteryear and, to finish, what could be better than homemade chocolate mousse? During the day, Stéphanie will welcome you for tee-time.
