With his beautiful bacchantes and his catogan hairs, this emblematic figure of Carcassonne, welcomes you in his "workshop". A world at his image: simple and unforgettable. Here, even furniture has a soul, a former life, a personal history, just like this jukebox-which plays retro airs or the benches that bear the years patina. All these singularities give an old time aspect to this bistro. This "taste craftsman" combines authentic and seasonal flavours of local organic products from friends of his who are farmers, breeders, wine growers and even truffle harvester.
