Charming bistro in Paris offering the best of local charcuterie, seasonal dishes and meats.
Chef Thierry Dufroux, who honed his talent at Loiseau, Guérard and Ducasse, has put down his utensils in this charming old school bistro and pays tribute in small ways to his native region, the Basque Country. On the slate, the best of the local charcuterie: black pudding, chorizo, quindillas... On the plates, and according to the seasons, risotto with cereals-gambas-green asparagus, stewed veal with sage, sweetbreads-sautéed porcini mushrooms, crispy millefeuille with strawberries and rhubarb in their own juice... A cuisine that surfs on the top of the wave!

初めて訪店してから何度か伺っています。
パリでこの料理の質とサービスを受けれるお店は少ないと思う。
バレンタインの忙しい中シェフは訪店した全てのお客に小さなキッチンの小窓からbonsoirと挨拶されていた。サービスのマダムと従業員の男性も満席の中笑顔、会話が絶えず素晴らしいと感じました。
また伺うのが楽しみです。
