Bistro in Paris offering a revisited and seasonal cuisine with countryside flavours, a meat menu.
That red facade on Rue des Tournelles is a familiar sight. It's that of the Bistrot de l'Oulette run by Sylvain Tracard, a chef whose ambition is to introduce his customers to the best flavours of the Périgord countryside. From foie gras (confit here with spiced wine) to cassoulet to duck breast. Would you like some more? At the time of our visit, the menu also included beef chuck braised in red wine and, in a lighter version, a fillet of roast sea bass with lemon sauce, accompanied by a chanterelle risotto. Nice wine and Armagnac list.

Really tasty food , lots of complicated mixtures of tastes and catered for vegetarians. The wine was very good and a reasonable price though the menu was limited. The pudding involved frozen puree apple soaked in calvados so both interesting and delicious.
