Japanese restaurant offering excellent makis and tempuras in Paris.

For more than years, Swan, the chef trained in Japan, has been doing his show continuously! And the public is still there, in total overheating… Behind his counter, where places are scarce and expensive, he plays a knife like a circus artist. It cut, cut, slice with such dexterity that you're amazed. It features excellent makis, shrimp tempura or oeufs volants eggs, eel sushi accompanied by a caramélisée sauce, but above all we have to dare some of its specialities not everywhere, including nattô (fermented soy seeds) and sunomono (vinaigrés dishes) or strawberry sashimi.

Excellent quality. One of the best sushi I've ever had in Paris.
The restaurant is small and tables are too close to each other which doesn't make the experience perfect, but if you want quality fresh food this is the place to go.

C'est tout simplement mon restaurant préféré. Certes, c'est plutôt cher (comme tous les restaurants qui proposent de très bons poissons). Certes, il ne faut pas y aller pour la déco. Certes, il faut savoir apprivoiser la maîtresse des lieux (et je peux comprendre que ça ne plaise pas à tout le monde). Mais ! Mais... La cuisine y est délicieuse. Sushis et makis avec beaucoup d inventivité et de maîtrise, brochettes exceptionnelles, même la soupe miso est excellente. Ce n'est pas un hasard si ce restaurant compte autant d'habitués, d'initiés peut être ;) qui lancent un "Merci Swan (le chef) ! C'était trop bon!" en s'extirpant de la salle exiguë.
