When it's high season, the Breton fish from Saint-Gilles-Croix-de Vie takes 36 hours to arrive on your table. A difficult job that he does with passion, even offering valuable services such as home delivery and a selection of take-away dishes (for hot dishes, it is imperative to order the day before). The eye is bright, the scales shiny: his fish is impeccable and the prices are nevertheless very high.
