Canteen in Paris offering a slate of different proposals, meats, fish and desserts.
You have to come at the very beginning of the service to get a table in one of Christian Etchebest's canteens, but when you get there, what a pleasure and what hesitation! Because here, you spend your time hesitating between the different proposals on the slate. Côtes-d'Auvergne or Morgon? Eggplant caviar with parmesan and pesto, Éric Ospital's pâté terrine or Father Fabre's goat curd? Back of cod with basquaise sauce, mitre of beef with red wine sauce or xistoras (thin sausages) with potato purée and smoked juice ? Chocolate mousse, lemon and citrus cream or rice pudding with caramel milk? The choice is difficult, but one thing is certain: it's a lot of fun.
