Le Bichat strives to be a popular canteen, an ode to slow food. Gourmet salads: beet, celery root, carrots, cauliflower, chard with coconut milk, chickpeas and mackerel with ginger, but especially the bowls to compose. Each bowl is made up of a Thai rice base, cooked vegetables, crudites and, as desired, chicken, pork, mackerel, egg or in vegetarian version.
