Mille et une coquilles is a snail-breeding farm that controls the entire life cycle of this gastropod, i.e. selection of breeding stock, reproduction, birth, growth in open-air pens and collection. Carefully processed on site, they are then sold on the farm or at markets. Snails in parsley butter, in fromentines, in court-bouillon, in aperitif puff pastries, in pies, in kougelhopfs with walnuts or in Gallic soup: we never tire of rediscovering and sharing them!
