The Dauby Mère et Fille champagne house welcomes you to the historic birthplace of great champagnes in Aÿ-Champagne. It was born of the meeting of two winegrowing families, Thérèse Tissier and Guy Dauby, two lovers of the land and wine. With a few inherited plots and a lot of hard work, they built up a vineyard on some of the best slopes in the region. In 1956, the adventure began with the acquisition of small oak champenoises and the production of the first Champagne Dauby cuvée. Today, the estate comprises eight hectares of vines, including one Grand Cru and three Premier Crus, planted mainly with Pinot Noir and Chardonnay. On the website or on site, the house offers a variety of cuvées ranging from bruts to whites and rosés. You can, for example, sample the Cuvée Brut Premier Cru, a harmonious blend of Pinot noir and Chardonnay, with fruity and mineral notes. Available in demi-sec and half-bottles, it's the perfect accompaniment to cocktails and seafood platters. An excellent address for enjoying the finest local champagnes!

BLANC DE NOIRS
A single-varietal cuvée made exclusively from our finest Pinot Noirs from Mutigny, a Premier Cru terroir. Its chalky subsoil allows the Pinot Noir to express itself fully, giving the wine incomparable typicity. Structured and rich in flavor, this is a Champagne Gastronomique par excellence. Also available in magnum (1.5 liters) .36 months cellar aging.
BLANC DE BLANCS
Produced in limited quantities, our 100% Chardonnay Champagne comes from our Premiers Crus terroirs and the Barbonne-Fayel vineyard in the south of the Côte des Blancs. Aged on lees for 5 years and made from a selection of our best cuvées, it perfectly expresses all the specificities of Chardonnay.
MILLESIME Brut
A great Champagne symbolizing an exceptional harvest! A plot-by-plot selection and long ageing in the cellar enable it to best express the personality of our terroir, combined with the specific characteristics of the 2012 vintage. This unique Champagne, with great ageing potential, is a model of balance between the power of Pinot Noir and the finesse of Chardonnay. 5 years cellar ageing.
CUVÉE FLORE
As ambassadors for our house, we've selected our finest grapes from the 2008 harvest, combined with our best wines from 2005. Exceptional ageing over 9 years and an Extra-Brut dosage reveal generous aromas of great finesse and absolute purity. A Grand Vin to be discovered by demanding connoisseurs.9 years cellar ageing.

Nous recommandons vraiment ce lieu magnifique.
Situé à Ay en plein coeur du Vignoble Marnais, l'accueil y est divin et plein de gourmandise.
Francine, Clémentine et Teddy sont des hôtes charmants toujours là pour vous satisfaire.
Une fois passé la porte, une dégustation s'impose et laissez vous porter par des cuvées exceptionnelles.
Je recommande cette adresse très vivement.
