Founded in 1838 by William Deutz and Pierre-Hubert Geldermann in Aÿ, this prestigious Maison is today run by the same shareholder as Maison Roederer. The terroir, however, remains unchanged, and the vines planted there produce top-quality grapes every year for a top-of-the-range final result. Deutz Champagnes can be found in all the best wine shops in France, as well as on the finest tables around the world. Amour de Deutz Blanc de blancs 2011 is an ideal match for caviar or lobster.

CHAMPAGNE DAUBY MÈRE & FILLE

The Dauby brand was born in 1956, when Guy and Thérèse Dauby began marketing their wine themselves. Today, the couple's daughter, Francine, and her daughter, Flore, are carrying on the family tradition. The eight-hectare estate is located on five different crus, with a predominance of pinot noir, which gives the Dauby wines their full-bodied, lively and fruity character. The Reserve cuvée is the signature of the house.

Founded in 1860 and owned by Bollinger Champagne since 2005, Ayala is one of the "little big" brands in the world of champagne, which both sells worldwide and keeps its size small enough to be able to source only from terroirs classified as grand cru or premier cru. It is one of the few houses that still produces a non dosed champagne (without sugar addition). On site, the property is magnificent, luxurious and serene, and while visits are by prior arrangement, the store is open Monday through Friday.

In 1829, Champagne's Emmanuel de Villermont hired a young German salesman, Joseph Bollinger, who married his daughter and inherited the vineyard. Almost two centuries later, the family, through its descendants, is still at the helm, maintaining the quest for excellence. Boldly crafted Pinot Noir gives the house wines their inimitable style. Our favorite is the Spécial Cuvée. The fruit of perfectly regular blending, thanks to the conservation of reserve wines in magnum, this wine is made for fine gastronomy.

Founded in 1893, this estate is currently undergoing a complete overhaul, and is home to a team of passionate experts. To make every visitor dream, the estate sources only the finest vintages and carefully selects its raw materials. The wines are fresh, slender, gourmand and aromatic. The BDB and BDN duo, two single-vineyard wines that have their place at the table, are a case in point. A particular favorite is l'EmpyreumatiC Grand Cru: powerful and spicy. The Édouard Brun house has a family vineyard of more than 8 hectares located in the Montagne de Reims, as well as in Aÿ and Mareuil, and composed of pinot noir, meunier and chardonnay blanc grapes. Since 1994, Mr. and Mrs. Delescot are assisted by their sons. The cellars of the house, several hundred years old, allow the champagne to age at a constant temperature. A recognized address which is worth the detour with a range of exciting champagnes.
