Eileen, who trained at the prestigious Culinary Institute of America in New York, offers a Franco-Caribbean fusion cuisine based on quality produce. Fruits, vegetables and herbs are harvested in the morning from an organic garden at Délices. The flavors are well-balanced, and the menu changes almost daily.
