The city of Nice is one of the few in France - along with Lyon and its traffic jams - whose name is directly associated with a highly codified type of cuisine. To enhance, preserve and promote authentic Nissarde cuisine, the label "Cuisine nissarde, le respect de la tradition" was created in 1998 by the Cercle de la capelina d'or with the Union départementale des offices de tourisme et des syndicats d'initiative: each restaurant owner who adheres to this brand and respects traditional recipes from Nice undertakes to promote a selection of regional dishes and to offer at least three of the dishes listed and cooked in accordance with tradition on its menu. But that's not all: home cooking, seasonal, prepared on site, respect for ingredients and local products, hygiene, knowledge of history, quality of the welcome, all values that the establishment also undertakes to respect!
To find out who benefits from this highly prized label, the restaurateur displays a sticker with the brand's visual on his shop window and a sign in the entrance of his establishment showing a young woman from Nice in traditional costume carrying a basket full of local produce
