As a result, some of the biggest names in Alsatian catering are supplied here with carp stocked in spring-water tanks until they are 3 years old. Only then is the carp, weighing close to 2 kg, delivered to a restaurant owner's fish tank, or in ready-to-use fillets brought in by refrigerated truck.
