The seaside town of Salinas holds a small (yet international) festival to celebrate the sauce for which it is known: mojo, a tasty combination of tomatoes, onions, peppers, garlic and olives, which Puerto Ricans call mojo isleño . This sauce is usually used to top a whole snapper or fried sea bass fillet, to garnish an octopus or conch salad, or to generously dress a lobster tail.
