This popular restaurant (Трајче Безистен) is the best address to try the city's specialty: "Bitola tripe soup"(Bitolska škembe čorba). Chef Vera Kuzmanovska boils tripe cut into small pieces for 4 hours, then cooks it with flour, carrots, bay leaves and pepper. Just before serving, she adds a garlic cream with vinegar. It's delicious, robust and, I hear, perfect for hangovers. It's also an opportunity to stroll down the two (slightly dirty) aisles of the venerable bezistan.
