Kaum, whose name means "tribe" in Indonesian, celebrates the culinary riches of the archipelago, inspired by the ancestral techniques of indigenous tribes. By working closely with local producers in the most remote regions, it gives pride of place to rare and tasty ingredients. Guests will be seduced by dishes such as fried fish and shrimp dumplings, topped with a spicy cashew sauce, satay (skewers), or crispy duck with green mango relish. Excellent cocktails.
