Although on an island, it's not so easy to find good sushi in Trinidad & Tobago, so we've selected the one at the Hyatt Regency in Port of Spain. It's easy to get to, often open and the fish is chosen with the utmost care. Of course, because of the American clientele, the fish is frozen before being served raw, but it's delicious nonetheless. The sushi master is, of course, Japanese, and will concoct "signature" rolls with Caribbean flavors. A recommended address, much frequented by the local jet-set.
